SPAETZLE MAKERS CAN BE PURCHASED AT FINE COOKWARE STORES OR THRU AMAZON.COM
Ingredients:
2 CUPS ALL PURPOSE FLOUR
1 STICK BUTTER (DON’T BE SHY)
1 TEASPOON SALT
2 EGGS
¾ CUP MILK
2 CUPS SHREDDED “FAIRVIEW SWISS CHEESE” OR MORE TO TASTE
1 BLOCK 6-8 OZ. LIMBURGER SCRAPED CLEAN & CUBED
1 MEDIUM ONION SLICED THIN CARMELIZED IN BUTTER
Directions:
1. Start a large pot of salted water to boil. Preheat oven to 350 F
2. Stir Together Flour And Salt Add The Eggs & Milk with Water Boiling Add Batter To The Hopper Of The Spätzle Plane And Begin To Slide Back And Forth To Empty, Boil For About 4-5 Minutes.
3. Remove The Spätzle From The Water With A Screen And Place In A Hot Skillet With Melted Butter Saute To Remove Moisture And Prevent Sticking.
4. Stir For A Few Minutes And Place The Hot Spätzle In A Baking Dish.
5. When All The Spätzle Are Made Mix In The ‘Swiss And Limburger’ Place In The Oven Bake Until Cheese Is Melted Stir If Necessary.
6. Add The Carmelized Onions / Butter To The Top Bake A Few More Minutes Sprinkle With Paprika (Optional) And Serve.
*Spätzle can also be used as a noodle plain or with gravy.
