Crab and Spinach Dip

Makes 2 quarts


1 pound crab meat

½ lb. “Fairview Swiss Cheese”

½ lb. Parmesan cheese 2 tbsp. reserved

2 packages 8 oz. Cream cheese

16 oz. Sour cream

1 package 10 oz. frozen chopped spinach, thawed and drained

1 teaspoon old bay seafood seasoning, little more to taste

Dash of cayenne & black pepper to taste

Directions :

Sauté spinach to evaporate liquid, set aside

Place crab meat in a bowl carefully examine for shell. Set aside

Place sour cream and cream cheese in large sauce pan heat over medium heat until smooth, do not boil, fold in parmesan and “Fairview Swiss Cheese” heat until smooth

Fold in spinach and crab meat.

Remove from heat and place into lightly greased baking dish or bread boule. Sprinkle remaining Parmesan on top.

Bake in preheated oven @ 350 f for 10 -15 min or until lightly browned

Serve with crackers, toast points or bread croutons.
